Once washed in warm brine and meticulously cleaned, it is subjected to a steam bath so that it acquires the appropriate hardness and does not break. They are then placed manually in the can and to preserve their flavor and texture, a top quality olive oil and chilli are used as covering liquid, to give it a slight spicy touch.
