Brief history of Cantabrian anchovies

At the end of the 19th century, the first Italians settled in Cantabria, mainly in the maritime town of Laredo, in search of raw material for their salting factories in Sicily. Here they found a perfect enclave for the supply and processing of salted fish.

Over time, towns such as Treto, Santoña, Castro, Colindres, and San Vicente joined this new movement and turned the production of salted fish into the main economic activity of the coastal towns of Cantabria.

Later, new technologies and adaptations to the new health regulations were incorporated, which have made it possible to improve the production of salted fish in all aspects: facilities, control systems, safety and traceability, etc. Although the traditional methods of production have remained intact, the traditional essence of Cantabrian anchovy production remains firm and contributes in a fundamental way to the quality of the product. Currently, Cantabria is the cradle of quality anchovies.

Conservas CODESA is a third generation family company, leader and with a broad vision of the market, since it is equipped with excellent technology and a highly specialized team, which maintains a craft of deep canning tradition.

For more than 30 years, Conservas CODESA has been producing 100% of its products in its own facilities in the fishing village of Laredo, with fish from the Cantabrian Sea, where the best raw material is selected and where traditional and artisanal production methods are always maintained.

Due to its commitment to tradition, CODESA has currently achieved a recognized prestige in the sector: in 2013 the cannery was recognized by "The European Enogastronomic Guilds (CEUCO)", by awarding it the prize as BEST EUROPEAN TRADITIONAL ARTESANAL PRODUCER, within the fourteen awards distributed throughout Europe, at the XI congress of European Enogastronomic Guilds, held in Pécs-Hungary; In 2014, it received the highest award "3 STARS" in the Tiki, developed in Brussels by more than 120 sommeliers and international chefs with "Michelin" stars.

CODESA has a plant with modern facilities that present the best quality, verification and control systems, which comply with the regulations required by the EC, as well as the BRCTS (British Retail Consortium Technical Standard) and IFS (International Food Standard) certifications, both classified with "A" and "High Level" (maximum level), which are the most demanding and strict quality certifications in the sector.

FREDO CANNED FOOD.

Conservas Fredo SL is a family company founded in 1964, dedicated to the production of Cantabrian Anchovy and other high quality pre-cooked products. Located in Laredo (Cantabria), CONSERVAS FREDO exports its product to 16 countries all over the world, and this is due to its enormous prestige, given by the quality of its anchovies.

CONSERVAS FREDO was founded by Don Chiaffredo Nasari, an anchovy salted fish merchant in his native Italy, who then carried on the family tradition when he arrived in Cantabria in 1964 and set up in a small warehouse in the port of Laredo. By 1980 the business had expanded with the acquisition of a second warehouse.

In 1998 the company made an important investment, as part of its policy of constant improvement and innovation, to move its facilities to the Laredo Industrial Estate. CONSERVAS FREDO currently has modern facilities with an operating surface area of 10,000 m2 and its products are a benchmark of quality both in Spain and internationally.

The cannery remains faithful to the traditional salting process and also maintains its traditionalism at the time of selecting the anchovies that will later be transformed into anchovies, and of course the line is maintained when starting the anchovy cleaning and filleting process, which is carried out completely manually, fillet by fillet.

The star product of CONSERVAS FREDO is the authentic Cantabrian Anchovy, which is marketed under the gourmet brand ELITE and has received international awards at specialized fairs. Currently, the range of ELITE anchovies has been expanded to include new organic product references, the first anchovies certified by the Regulatory Council of Organic Agriculture of Cantabria.

As part of the company's continuous process of innovation and development, an exquisite range of high quality pre-cooked dishes has been developed, which has already been recognized and awarded the Great Taste Awards 2008, at the Speciality Gourmet fair in London.

After two years in which a careful process of recipe development has been carried out in collaboration with the Department of Agri-Food Technology of the Miguel Hernández University, the elite anchovy cannery can boast another great product, which they have called DELICIAS FREDO, a range of six references, which will surprise even the most demanding customers: peppers stuffed with shrimp and squid or stuffed with tuna in vegetable sauce; tuna steak with homemade tomato sauce or with a delicious mustard sauce; tuna a la campesina or Tuna Stew. LAREDANA CANNED TUNA.

Conservera Laredana SL is a company of recognized prestige in the production of anchovy fillets. Its origins date back to 1907, and it adopted its current name in the mid 70s.

LAREDANA is mainly responsible for the production of anchovy fillets in oil, salted anchovies and anchovies in vinegar, combining traditional techniques with the most modern means of production in the sector. This is how it achieves the best quality both in its origin and in the processing and packaging, so that the product reaches its customers in the best conditions.

REZUMAR SA, "Anchoas Artesanas del Cantábrico", is a family company founded on June 29th, 1957 by Mr. Ceferino Revolvo Bustamante, who founded the cannery under the non-negotiable premise of offering the consumer a product of the best possible quality, taking advantage of the excellent raw material offered by the Cantabrian Sea.

Today the company is led by the sons of its founder, Mr. Ceferino and Mr. Tomás Revolvo, who produce the anchovies in a totally artisanal way and based on legitimate anchovies from the Cantabrian Sea.

Among the principles of the company we can find the following: to select the best catches of the Cantabrian Sea, to mature the salted fish in an absolutely natural way, to pamper the anchovy to the maximum in its elaboration, to select the best Spanish oils as a complement of the anchovies and to work with the best and most qualified manufacturing staff. These principles, added to the experience of the cannery, to its trajectory, achieve one of the best anchovies that can be found in the world anchovy market.

REZUMAR offers two different elaborations of anchovies: "Elaboración Hostelería-Estándar" and "Elaboración Gourmet-Gran Reserva". Both are elaborated with anchovies from the Cantabrian Sea.

- Elaboración Hostelería-Estándar": made with anchovies from the Bay of Biscay. The quality/price ratio offered by this line makes it very competitive. It is focused on customers in the hotel and catering trade or medium and high consumption sales.

- Elaboration Gourmet-Gran Reserva": made with anchovies from the Cantabrian Sea. Anchovies of extreme quality. It is elaborated with the most qualified personnel and according to a meticulous selection of each of the specimens. The best oils in the country are also used.
