The turrón de Alicante (hard nougat) is a sweet that is mainly composed of toasted almonds, sugar, honey, and egg white. Thanks to the egg white, the texture of this is hard and gives it that white color that characterizes him.
Difference between the turrón de jijona and turrón de alicante.
Both are still in the process of developing quite complex and very similar. Their main difference is that the almond nougat is purified while that of Alicante, the mass, which is obtained by mixing egg white, honey and toasted almonds, it is dried and introduced into molds to be later cut and packaged.
In addition, the nougat from Alicante, do not pass through the machines in the form of a giant mortar which gives that touch that characterizes the turrón of Jijona.
