What do we find in acorn-fed Iberian cular chorizo?
Acorn-fed Iberian chorizo is one of the best Spanish sausages and is obtained thanks to the combination of acorn-fed Iberian pig meat with different spices, such as paprika, one of the main protagonists, which explains its red color.
The healthiest option among the different types of chorizo, then the choice should be an acorn-fed Iberian chorizo. Like hams made from this special breed of pig, which are allowed to forage on oaks and pastures eating herbs and acorns, the meat has a special flavor and the fat contains oleic acid due to the pigs' diet. Oleic acid (also present in olive oil) helps the body produce "good" cholesterol and reduce "bad" cholesterol. Therefore, a chorizo made with this meat will be much more beneficial to your health than any other type.
The highest quality chorizo is made with a mixture of lean pork tenderloin combined with a fattier pork, essential for the curing process and adding flavor.
