The hake roe is the protagonist, we have prepared it in partridge sauce and you will see how delicious they are.
During the most suitable time of year, we select the best specimens of this fish at the Vigo and Coruña fish markets. Once in the factory they are cooked and cleaned.
The roe is extracted manually and chopped into portions. As a covering liquid, a homemade sauce based on olive oil, vinegar and a splash of wine is used, all seasoned with bay leaf.

- Hake roe is still the egg of an oviparous animal, so it can share certain properties, such as being an emulsifier, thickener ... As it has a large amount of fat, it can easily absorb aromas.
- They are the best dietary sources of Omega 3. A minimum consumption of hake roe covers the body's needs for essential omega 3 fatty acids, due to its levels of EPA (eicosapentanoic acids) and DHA (docosahexaenoic). It also has high concentrations of proteins (between 16% and 30%) and lipids (between 5% and 20%). The main lipid components of roe are triglycerides and phospholipids. They have a high amount of cholesterol, are rich in phosphorus, vitamin B1, B2 and vitamin E
