Premium Anchovies in Extra Virgin Olive Oil 20/22 Fillets, 125 g – Conservas Del Ponto are a gourmet semi-preserve produced in Santoña (Cantabria) using anchovies from the Cantabrian Sea (Engraulis encrasicolus). Each fillet is carefully prepared through traditional hand-massaging and packed one by one in extra virgin olive oil, ensuring a firm texture, natural shine and a perfectly balanced sea flavour.

This format contains approximately 20/22 medium-sized anchovy fillets, selected from the best seasonal catches. Their balanced size makes them ideal both for sharing and for enjoying in gourmet appetizers.

After being caught, the fish undergoes a traditional salting and maturation process that can last around one year, allowing the anchovies to develop their characteristic aroma, texture and depth of flavour.

Once the maturation process is complete, each anchovy is cleaned by hand, removing skin and bones, carefully massaged and filleted individually before being packed with olive oil.
