The porridge of la mancha, is a Spanish dish from the region of La Mancha, but in other regions of Spain will be other variants (in the Valencian Community, Andalusia and even appears in the Russian tradition).
It consists of a kind of porridge, consisting of roasted flour cooked with water, which is made with pork belly, garlic, paprika, olive oil and salt.
The flour of vetch (used for its development) is not easy to get out of the region of Castilla-La Mancha; and within, commercially they get mixed with the wheat, because of the toxicity present in the almorta.
In origin it was food of shepherds and country people, consumed mainly in the cold days of winter. This dish is consumed popularly in a circle around the "pot" or pan that has been used for the development, with a spoon or with a simple piece of bread.
Both in Cuenca, ciudad Real, Toledo and some towns of the province of Jaén, have the habit of not eating porridge when someone has died in the village. It is said that if there has been a dead man, that day put a finger in the pot
