Conservas Zallo is a family business that was created in approximately 1926, although it was not established with this name until 1979. It is located in Bermeo, in the province of Vizcaya, a place with a great seafaring tradition. Its location in the Cantabrian Sea makes it possible to access the highest quality fish.
Its way of making it has not changed over the years, it has always focused on artisanal making with the highest quality raw material. Although they adapt to new media and innovations in utensils, going from wood to stainless steel) tradition and craftsmanship are always maintained.
Its anchovies are made only with mouthfuls from the Cantabrian coast of the spring, the best quality. Thus, a top quality anchovy is achieved.
Canning Don Bocarte
Don Bocarte presents prestigious anchovies that have a salmon-brown hue, uniform and without dark stain along the spine. But not only this makes them excellent, but also the artisan and manual elaboration, a scrupulous cleaning one by one and curing of 6 months in salting, which makes production limited.
These anchovies from Santoña are high quality pieces made from Cantabrian mouthful fish in spring , months in which the fish is tastier (April, May and June), giving rise to one of the best raw materials in the world.
They have a consistent presence, a fleshy texture, a sharp and deep flavor without being salty, and they appear hand-assembled piece by piece with extra virgin olive oil, which enhances their flavor and provides smoothness. Don Bocarte guarantees that you will be able to appreciate the tenderness and quality of the sea when your anchovies arrive at your table, as if they were freshly caught.
Located in Santoña, Don Bocarte was born in 1997 and his dedication has made this company one of the most valued in the sector. Its success is due to the selection of the best raw material from the Cantabrian Sea and the care it dedicates in the process of making the preserves.
Canning Miguel Ángel Revilla
Miguel Ángel Revilla, president of Cantabria, is known for his passion for anchovies, to such an extent that a cannery from Santoña asked him for consent to use it as a trademark. This, who has no link with said canning company except for the agreement to offer the best quality in this product , agreed delighted to give visibility to a quality product his land, as a condition he only asked to donate 2% of the collection of the same to the organization of "La Cocina Económica" of Santander, run by the religious Daughters of Charity who daily serve food to those most in need.
Canning Pujadó Solano
At Conservas Pujadó Solano they offer a range of superior quality products "Extra Selection" where you can find the best quality fillets. Selected steaks of larger size and longer curing time, filleted with a meticulous process.
Conservas Pujadó Solano dates back to the 70s when Milagros Solano, daughter of the Cantabrian town of Santoña, top of the anchovy, from a family with a seafaring tradition and the salting of anchovies, decided, with her entrepreneurial spirit and the unconditional help of her husband Alfonso Pujadó, founding the company in Barcelona in 1984.
Tradition of Anchovies in Olive Oil
Among the first Italian salting producers to come to Santoña, one name must stand out: Giovanni Vella Scaliota. Vella had arrived in Santoña sent by the prestigious Neapolitan firm Angelo Parodi, dedicating himself to the salatori profession (saladores). His merit was inventing anchovy fillets in oil.
The salted anchovy had to be cleaned at the time of consumption (as is still done now) and once prepared, take it natural or with a little butter to soften its salty flavor as it used to be served in Italy.
Signore Vella, began to be obsessed with the idea of carrying out these tasks in the factory and canning the anchovy to sell it to the consumer directly, for this he began to carry out the entire process in the factory: cleaning the salting and then forming two strips or fillets, removing the central spine and canning the strips in cans, using melted butter as a topping.
The price of butter was too expensive, so it was replaced by olive oil, giving rise to the anchovies that we all know.

Selecting the Perfect Format
It is the ideal format to enjoy a company or in a small meeting. To share a pleasant moment with friends, or why not a little whim to enjoy at any time. The greatest dangers of anchovies are light, heat and oxygen, which is why canned formats are the most suitable for a perfect state of preservation of their properties.
