Production is limited and handmade, carried out only during the fishing season. The traditional hook-and-line method ensures each tuna is caught individually, preventing damage to the flesh and maintaining optimal texture and flavour.

This ancestral technique (trolling) respects marine ecosystems and seabeds while guaranteeing superior quality.
