We used to grow cereals, but after inheriting the land, we decided to grow pistachios in Calzada de Calatrava (Ciudad Real), a perfect location for its dry climate, cold winters, and warm summers. Pedro, along with Angelito, a master roaster since the 19th century, perfected the hand-roasting process we maintain today. In 2013, after winning an innovation award at the Salón Gourmet, Finca La Rosala was born.
