Production, Curing and Packaging

We select the finest PDO Aloreña olives from olive groves in Málaga. They are hand-cracked and pressed to allow the marinade to penetrate and then cured in brine until achieving a perfect balance of bitterness, salt and aroma.

The marinade is made with extra virgin olive oil, garlic, thyme, pepper and fennel, enhancing their character without masking the essence of the fruit. Packaging in a glass jar ensures the preservation of their crunchy texture and authentic flavour.

History & Origin: PDO Aloreña Olive (Málaga)

The Aloreña olive was the first table olive in Spain to receive Protected Designation of Origin status. Its identity is closely linked to the Sierra de las Nieves and the know-how of generations of local producers.

The traditional technique of cracked or pressed olives allows better absorption of the marinade and delivers a more aromatic and flavourful bite. Today, this artisanal process is preserved alongside modern quality and traceability controls.
