Chorizo ​​is a meat sausage originating from the Iberian Peninsula , also traditional in Latin American cuisine and in other regions with Spanish and Portuguese cultural influence, where it can be part of fusion cuisine .

The name chorizo ​​has a more restricted use in Spain, where this sausage always has garlic and paprika , which gives it its characteristic flavor and its red color; In Latin America chorizo ​​can refer to other types of sausages (Iberian chorizo ​​is known in this region as Spanish chorizo).

In Spain it is a cured sausage (well air, well smoked ), made mainly from pork minced and marinated with spices , the most characteristic being the paprika , which is the most distinctive element of chorizo ​​compared to other sausages , and also the one that gives it its characteristic red color and slightly spicy flavor. The skin of this type of sausage is usually pig small intestine , although the large intestine of the same is also used for the variety of chorizo ​​cular .
