The hind legs of the 100% Iberian acorn-fed pig are deep red with minimal marbling of pearly fat. Its flavor has an intensity that is difficult to classify, with a herbaceous and fruity bouquet; something outstanding in a world like ham, increasingly globalized and homogeneous.
Acorns undoubtedly influence the final flavor that an Iberian ham acquires. But it is not the only thing. Food is linked to the type of life that the animal has led. These animals are loose in the Meadows during their life and this gives the animal unique characteristics in its formation.
Acorn-fed Iberian pigs have spent at least 60 days grazing in the Dehesa and feeding on their acorns (Extrem pigs can spend up to 1200 days in the montanera)
Acorn-fed Iberian pork fats have more than 55% oleic acid. These fats, as shown in scientific studies, have a beneficial effect on blood cholesterol. To give you an idea, only virgin olive oil has a higher oleic acid content. Have you ever heard that acorn-fed Iberico is called the olive tree with legs?
The total proportion of unsaturated fatty acids is greater than 75%, which makes it the most heart-healthy of all known animal fats and even healthier than some of vegetable origin. We owe the credit to the breed of pigs; and their diet based on acorns and grasses.
Another of the properties of this ham is the presence of B vitamins, beneficial for the proper functioning of the nervous system and the brain. The presence of vitamin E, recognized for its antioxidant character and minerals such as copper, calcium, iron, zinc, magnesium, phosphorus and selenium.

Acorn-fed ham properties
Iberian ham provides proteins, vitamins B1, B6, B12 and folic acid, necessary for a good brain function. It is also rich in vitamin E (antioxidant) and minerals such as copper, calcium, iron, zinc, magnesium, phosphorus and selenium.
