Properties of cockles
The common cockles or Cerastoderma edulis, are bivalve mollusks that have very marked striations on their two shells as their main characteristic.
Nutritional properties
Cockles contain very low levels of fat, specifically between 0.5 and 2%, providing 47 calories per 100 grams of edible portion and a high protein value.
The vitamins present in this species are mainly from groups B and A. Among the first, the B1 (thiamine), B2 (riboflavin) and B3 (naicin) stand out, which facilitate the absorption of energy nutrients, while regulating processes of production of red blood cells, sex hormones and synthesis of genetic material. Vitamin A (retinol) is involved in the generation and maintenance of mucous membranes, skin and bone system.
Among the minerals present in cockles, mention the levels of phosphorus, calcium, magnesium, iron and potassium.
