A Unique Artisanal Process
Once in the workshop, a meticulous and completely manual process begins:
- 2 days soaking to soften the outer skin.
- Hand peeling one by one.
- 1 more day in water to soften the inner skin.
- Blanching in small batches of 20–30 units.
- Individual wrapping in artisan gauze.
- Then starts a triple traditional cooking:
- First cooking: 3 hours.
- Second cooking: 1 hour.
- Third cooking: 1 additional hour.
In total, more than 5 hours of slow cooking for a tender, delicate and perfect texture.
Hand-Packed, As Always
After the final cooking, the chestnuts cool, the gauze is removed and they are placed carefully in glass jars. The natural syrup generated during the process is added, and the jars are finished with a bain-marie to ensure preservation without additives.
