The Cherries in Aguardiente by Prada a Tope have been crafted the same way since 1972. Made with cherries of the traditional Bierzo variety “Francesa or Napoleón”, they are selected one by one and prepared following a fully manual and ancestral process.
The Fruit: Bierzo Cherries
The cherries are purchased directly from farmers in the region, always selecting the best batches and paying above market price to ensure the highest quality.
A Traditional and Fully Handmade Process
Once in the workshop, the process begins:
- The cherries are washed thoroughly.
- Each stem is cut by hand.
- They are carefully sorted and placed into glass jars.
- The jars already contain sugar, cinnamon, coffee, mint and star anise.
- Finally, they are covered with 50º aguardiente until overflowing.
The jars are sealed and must rest for at least one year. During this time, the aguardiente absorbs the essence of the cherries, while the fruit takes in the alcohol, creating a perfect balance—intense, aromatic and incredibly smooth.
A Bierzo Tradition Since 1972
This method was historically used in Cacabelos to preserve cherries that were not sold. Over time, it became a family delicacy and even a natural digestive—one sip of the infused aguardiente was considered enough to “put things right”.
