Cheese made with raw milk, what does this feature mean?

The preparation with raw milk does not carry out any thermal or physical process of bacterial elimination, the microorganisms in the milk remain unchanged and they go directly to the cheese, which requires an exhaustive control in the elaboration .

The sheep are in an ideal natural environment with great vegetation around them.

Raw milk offers more intense and personalized flavors with an acid, spicy and salt point.

Tradition

At the beginning of the 20th century in Cabuerniga, Cantabria, Concepción Llano began to make cheese for consumption and what was left over was sold in the markets. He made cheeses so delicious that the recipe was passed from generation to generation, transferring with it the traditions and the good work of cheese.

It is in 1990 when Concepción's great-grandson decides to open a cheese factory in order to show the world its quality. Since then they have grown in size and quality, and have won numerous awards confirming their quality.
