This cheese is made with raw cow and goat milk. It is a cheese similar to cabrales cheese and is made in the mountain villages of Asturias. Following tradition and always making artisan cheeses of the best quality.

This is a fatty, matured cheese with a natural rind and slightly smoked. Its bark is thin with reddish, green and blue tones while its interior, although it has these nuances, is white-yellowish.
Its pasta is semi-hard or hard, firm, with small eyes and irregularly distributed.
Its flavor is intense, predominating the smoothness of the smoke and with a slightly spicy touch becoming buttery and with a persistent aftertaste in the mouth.

Protected Designation of Origin
Gamoneu del Valle cheese is produced in small family dairies in the western massif of the Picos de Europa. Specifically in the villages of the lower areas of the councils of Onís and Cangas de Onís.
To comply with the denomination, both the production of milk, as well as the manufacture and maturation of the cheese must be carried in this area.
Periodic inspections and controls are carried out to verify that the cheese factories meet the requirements for the designation of origin.
