Don Crisanto San Simón da Costa cheese is a cheese with a thick amber rind.
The pasta is fat, dense and brown, with a fine texture and almost no eyes, light yellow in color. On the nose, the notes of smoking with birch wood stand out above all. On the palate it is dense, fatty, with notes of nuts and, above all, smoked.
