For decades, the World Cheese Awards have brought together experts and cheese lovers from all over the world, highlighting excellence in cheese making and flavor.

Picón Cheese: Traditional Delight with Denomination of Origin

Picón cheese has had a Protected Designation of Origin since 1994. Traditionally known as Picón de Tresviso or Picón de Bejes cheese, its regulation unified these names for the cheeses produced in this region. The towns of Tresviso and Bejes, known for their rich cheese-making tradition, are the main producers and have given their name to this exquisite cheese.

Picón de Cantabria Cheese

Of "Picón Bejes" origin, it covers the Liébana region and the municipality of Peñarrubia. The town of Bejes is one of the nerve centers of this cheese production, guaranteeing the authenticity and quality of Picón cheese.

Ripening in Cuevas

The ripening of this cheese is a natural process that takes place for a minimum of two months in limestone caves, characteristic of the region. This traditional method of ripening in natural caves gives Picón cheese its unique flavor and texture.

Traditional Elaboration

Picón Cheese is made in a traditional way with whole raw milk from cows, sheep or goats, or a mixture of these. This traditional technique ensures that each cheese has an authentic flavor and exceptional quality.

Characteristics of Picón Cheese

Rind: Soft, thin, unctuous and gray with yellow-greenish areas. Paste: Unctuous with varied cohesion, depending on the degree of fermentation. It presents a compact texture with visible eyes. Color: White with blue-greenish streaks. Flavor: Slightly spicy, intensifying when made with sheep's or goat's milk, or a mixture of both.

Origin: Río Corvera Cheese Factory

This cheese has its roots in the heart of Cantabria, handmade in the small town of Bejes-Tresviso. The production of this cheese is highly careful, maintaining the traditional techniques that have been passed down from generation to generation. The milk used comes exclusively from local herds, which guarantees its freshness and contributes to a unique flavor profile that can only be found in this P.D.O. cheese.

Using the best raw material and following traditional artisan methods, we present you our Picón-Tresviso cheese.

Located in the stunning Liébana Valley, we mature our cheese in caves for a minimum of 60 days, thus ensuring a product of the highest quality.
