Caramelised Tomato, Kiwi, and Anchovy Toast

Ingredients:

- Toasted bread

- Caramelised tomato

- Kiwi

- Anchovies

Preparation:

- Spread the caramelised tomato on the bread.

- Place thin slices of kiwi on top.

- Add the anchovy on top.

- Ready to serve!

Anchovy and Fresh Cheese Toast

Ingredients for 3 people:

- Cantabrian anchovies in extra virgin olive oil

- Fresh cheese

- 1 baguette

Preparation:

- Slice the bread into medium-thickness slices and toast them slightly.

- Thinly slice the fresh cheese and place it on the toast.

- Generously cover with anchovies.

* Tip: Before adding the fresh cheese, drizzle some of the olive oil from the anchovies onto the toast, but don't overdo it. This will make the toast much juicier.

Spicy Chorizo and Anchovy Toast with Condensed Milk

Ingredients:

- 2 slices of rustic bread

- Spicy chorizo

- Anchovies in extra virgin olive oil

- Condensed milk

Preparation:

- Place slices of chorizo on the rustic bread.

- Drizzle with condensed milk to taste, ensuring the contrast is just right.

- Repeat the process with the anchovies and condensed milk on the other slice. Be mindful not to use too many anchovies to avoid excessive saltiness.

- Bake the toasts in the oven for about five minutes at 180 degrees. Keep an eye on the anchovy toast so it doesn’t overcook and dry out, whereas the chorizo can cook for a little longer.

- Once done, cut into medium pieces and serve on a board.

Roasted Peppers and Anchovy Toast

Ingredients for four servings:

- Rustic or good quality bread for toasting

- 1 tin of Cantabrian anchovies

- Homemade roasted red peppers

- 1 clove of garlic

Preparation:

- Slice the bread and toast it in a toaster or oven.

- Slice the peppers into strips.

- Place the peppers on the bread.

- Finely chop the garlic and sprinkle it over the peppers.

- Add an anchovy on top of each toast.

Ingredients for 4 servings:

- High-quality bread

- Ripe but firm tomatoes

- Fresh cheese

- Anchovies in olive oil

- Oregano

- Olive oil

Preparation:

- Slice the bread and toast it, drizzle a bit of olive oil over it.

- Add slices of tomato and fresh cheese.

- Top with anchovies, a bit of oregano, and a drizzle of the anchovy oil.

Salt-Cured Tuna with Olive Tapenade, Tomato, Apricot, and Pine Nuts Toast

Ingredients for 4 people:        

- 4 pieces of Salt-Cured Tuna

- 4 toasts (to your preference)

- 3 Tomatoes (such as pear or Ramallet tomatoes, juicy)

- Pine nuts

- Apricots (or any other sweet fruit)

- Chives

- 1/2 Lemon

- Extra Virgin Olive Oil

* For the Olive Tapenade:

- Black olives (from Aragón)

- Capers

- Santoña anchovies

- Olive oil

Preparation:

- Arrange the toasts.

- Wash the tomatoes.

 Grate or peel them, remove the seeds, dice them, and drizzle with a generous amount of oil.

- Allow the anchovy slices to reach room temperature. Then place one on each toast. Soak them in oil to soften them.

- Serve the diced tomato and its oil as a side.

- For the olive tapenade: Blend all the ingredients finely. You can adjust the texture by adding more or less oil.

- Spread the olive tapenade over the salt-cured tuna to your liking.

- Drizzle with lemon juice. You can toast or not toast the pine nuts, distribute them to taste, and do the same with the apricots.

- Finely chop the chives and sprinkle them over.

- Enjoy!
