Preparation, Maturing and Marketing
At Finca La Rosala, we follow a traditional hand-roasting process learned from Angelito, a master roaster since the 19th century. We apply our Tasty Roasted formula:
- We wash the nuts and add carefully measured sea salt (1.5%-2%).
- We add 4% EVOO in horizontal trays and form a thin layer of nuts.
- We stir manually every 8 minutes until we achieve the perfect crispy texture.
- Some nuts are given a touch of DOP Pimentón de la Vera to enhance the smoky flavor.
The result is a gourmet snack with no added sugar , gluten-free , lactose-free , and additive-free, which maintains the essence of fried nuts but without their drawbacks.
History and Origin: Finca La Rosala
Finca La Rosala is a family story that began when Encarni Ciudad inherited the reddish soils of Calzada de Calatrava, Castilla-La Mancha. Inspired by the tradition of planting pistachios on dry land and thanks to Angelito, a master roaster from the province, Pedro learned ancient roasting techniques . His son Pedro Jr. took these artisan nuts to the Salón Gourmet , winning an innovation award in 2013. Since then, the family has worked together to create surprising flavors, with natural ingredients and optimal roasting, present today in more than 15 countries.
