Santoña Anchovies for Fine Dining — Premium Series, 10 loins, M.A. Revilla
What’s inside this Fine Dining tin?
The largest anchovies are handpicked for their scarcity and crafted into a limited series that undergoes 10–12 months of maturation and meticulous cleaning. The result is a top-quality product with broad loins, a savory profile and a delightfully smooth texture.
Origin and craftsmanship
Sourced exclusively from Cantabrian anchovy (bocarte) during the spring season, when fat content and flavor are at their peak, each loin is individually hand-trimmed in the traditional way to preserve structure and deliver a finer, longer-lasting mouthfeel.
Accolades
Quality has been recognized with awards such as Best Anchovy at the Santoña Fair 2018 and a Great Taste star 2019, highlighting the brand’s consistent excellence.
About Conservas M.A. Revilla
Founded in 2013 to revive a family artisan legacy, the cannery works with local raw material and traditional methods. The brand bears the name of Miguel Ángel Revilla, president of Cantabria, who granted its use in exchange for 2% of sales being donated to La Cocina Económica de Santander. Their motto, “We are not the first, but we want to be the best,” sums up the ambition.
Format and storage
The 10-loin format is ideal for a refined appetizer, perfect on its own or to share. To preserve the anchovies’ properties, keep the tin away from light and heat, as oxygen, high temperatures and light exposure are their main adversaries. The tin packaging provides an effective barrier, ensuring freshness and stability up to serving time.
