Las anchoas siempre deben de conservarse en el frigorífico hasta su degustación, una vez queramos disfrutar de estas, las sacaremos unos 15-20 minutos antes para que a temperatura ambiente el aceite y la sal se disuelvan de su posible solidificación a causa del frío.

Siempre que sea posible una anchoa se conserva y se presenta mejor en formato de lata, más caducidad, mejor presentada por su forma horizontal que a la hora de colocarla es mejor.
